Cinnamon Rice Recipe

In addition to being a tasty spice, cinnamon helps to lower blood sugar and increases insulin production in the body. It reduces LDL ("the bad") cholesterol, has shown to have anti-microbial benefits against H. pylori bacteria and has been shown to reduce chemical agents known as cytokines linked to arthritic pain.
Original recipe makes 4 servings
INGREDIENTS
- 1 cup uncooked rice
- 2 cups water
- 2 tablespoons nonfat milk
- 5 tablespoons raisins
- 2 teaspoons butter
- 1/2 teaspoon ground cinnamon
- 1 teaspoon sugar or maple syrup
DIRECTIONS
Bring rice, water, milk, raisins, and butter to a boil in a saucepan over medium-high heat, stirring occasionally. Reduce heat to low, cover, and cook until liquid has absorbed and rice is tender, about 15 minutes. Mix together cinnamon and sugar/maple syrup, sprinkle/pour over rice to serve.
